Please ignore the awful picture above. Photography is not one of my strengths! I've been making this meatloaf recipe for years and it's very moist. The recipe is from a Gooseberry Patch cookbook.
Ingredients:
1-1.5 lbs of lean ground beef
1 cup of tomato juice
3/4 cup of oats (I use quick cooking ones)
1 egg
1/4 cup of chopped onion
1/4 cup of chopped green pepper
1/2 teaspoon of salt
1/4 teaspoon of black pepper

Directions:
Preheat oven to 350 degrees. Combine all ingredients and mix lightly. Press mixture into loaf pan. Spread top with ketchup! Bake for one hour or until finished. Drain excess grease and let stand for five minutes.
The original recipe calls for a Piquant Sauce topping, instead of ketchup. My husband prefers ketchup. Here is the piquant sauce topping for anyone who is interested:
3 tablespoons of brown sugar
1/4 cup ketchup
1/4 teaspoon nutmeg
1 teaspoon of dry mustard
Directions:
